Welcome to J’AIME
Here at J’AIME HQ we’re preparing to celebrate the
most wonderful time of the year in style, ready to indulge
in all of those festive treats which we, along with most of
the world, missed out on last time around.
The spectacular panto season is back in full swing, and
we catch up with the cast of the Lichfield Garrick’s
All New Peter Pan for a sneaky look at what they have
in store, while Byron Lewis from Lichfield Garden
Centre shares his top tips for getting the most out of
your Christmas tree, and Staffordshire sommelier
extraordinaire Bert Blaize shares some delicious ideas for
festive food and drinks pairings.
Our Shop Local gift guide is back with some more
fabulous ideas from local retailers and companies, while
our resident beauty expert Deborah Mitchell showcases
some pampering treats. And we can finally get our festive
gladrags back on for party season, so we round up some

After a whirlwind of a year during the COVID-19
pandemic, panto is finally back. Lichfield Garrick
Theatre has opened its stage doors and this year’s
wonderful performance is all about the boy who
wouldn’t grow up, All-New Adventures of Peter Pan.
The Lichfield Garrick Theatre has come together
with Paul Hendy and Evolution Productions to
bring audiences a great festive treat with this year’s
full-scale pantomime. After not being able to put on
shows for over a year, they will be going all out for
this special time.
As many other industries, the theatre world took
a great hit due to the pandemic and the cast are
excited more than ever, to get back on stage and put
on a spectacular performance for their audience.
The talented Marcus Billany is playing the part of
Peter and he’s familiar with this role, having stood in
for Strictly Come Dancing’s AJ Pritchard during his
show two years ago.
Marcus is looking forward to putting on a
performance and Peter Pan wouldn’t be Peter Pan if
there was no flying involved, right?
“It’s been so long since I’ve been able to perform
on stage, so it’s just great to get back and I’ll also be
flying during the show, I was scared at first when I
had to do it before but then eventually got used to it
and I’m excited to get back into it,” he says.
Sam Rabone, a familiar face to Lichfield panto
audiences, is back for his sixth year at the Garrick
as he stars as Mrs Smee. That’s as well as being the
show’s director for the fourth year.
“It’s my first time doing Peter Pan, so I’m very
excited because it’s brilliant for both boys and girls to
enjoy,” says Sam.

“You have Cinderella and Sleeping
Beauty which are very female-lead
but Peter Pan has got both a good
strong male and female lead. It’s a
bit different to the other ones; it’s
not a traditional panto but there are
great panto elements in there so it’s a
really nice story to get your teeth into
because everybody wants to be like one
of the lost boys or Peter Pan, you want
to be able to fly, everybody wants to be
able to learn how to fly and we will be
flying here so be ready to see Peter Pan
take off.”.
He added: “It’s a new show, it’s not the
traditional Peter Pan. We have gone
a little off-piste, it’s in the future so we are looking
forward to giving you a bit of a new take on it.”
David McKechnie is playing the unforgettable Hook
and it seems he’s most looking forward to crocodiles
- very fitting for his character.
“I’m thrilled to be dressed as a pirate again, I wasn’t
able to do pantomime last year of course because of
what was happening, it was so sad because I love it,
it’s my favourite time of year,” says David. “It’s so
much fun and it’s a lovely way to end the year, so it’s
great to be back and I’m really looking forward to
it… I’m counting the days!”
He added “I really like crocodiles, I’ve always liked
them and if there’s one thing I love more than a
crocodile, it’s a pantomime crocodile, so I can’t wait
to see him! For Captain Cook it’s all about when he
first gets to meet the crocodile, I’m getting excited
thinking about it!”

world costumes and, of course, extra laughs to be
enjoyed by all the family.
After missing out on theatre due to lockdown, it’s
fair to say there may be some wobbly knees before
the curtain opens but the cast just want to be able
to feel the buzz of energy and happiness during the
Christmas season more than ever.
“It’s been so long you kind of forget what it’s like
to be on stage and as soon you are on stage there
is nothing better and it all comes back, the nerves
go away and what I’m looking forward to most is
the smiles on the kids’ faces, they’re coming on an
adventure with us and there is nothing better than
that the smiles and cries of laughter, screams and it’s
amazing!” said Marcus.
“There’s always jitters before walking on to the stage,
you feel it in your stomach, this nervous feeling and
as soon as you get on it becomes this energy that
you’re able to use for the performance. It really
is a great spectacle, Evolution productions are an
excellent production company, they’re doing the set,
costumes and lighting etc. so it’s
a really big show, it’s going to be
a lot of fun and you can expect a
lot of laughs and of course some
good old-fashioned musical gags,
you know those really corny old
jokes that everyone loves.” says
David.
The fun of Peter Pan tied in
with Christmas will be a magical
event, centred around joy,
happiness and giggles. If there’s
one thing that the cast all have
in common, it’s the love to bring
light and laughter to everyone

there’s no other show where this happens, and he
can’t wait to give a warm welcome to the city of
Lichfield.
“The most important thing is laughter, if you
don’t laugh you can stay at home, but we just want
laughter in the room that’s why we do it,” he says.
“Panto can be a long few weeks, we are working
doing two shows a day, if you go to West End they
won’t do this many shows so it’s a very intense
month-and-a-half. It’s also over the holiday period
where people would normally be spending time with
their families but we choose to do this and entertain
families because there’s no better thing at Christmas
than hearing a room full of laughter so it’s great
when you get the family together.
“And panto is brilliant because a grandma will be
laughing at something similar to the grandchildren,
and there’s no other show where that happens.”
Getting back to life pre-Covid times may feel a little
unusual but we are getting there slowly and it’s
the small things that we have learnt to appreciate.
Whether that be, going for walks, seeing friends and
family, going to eat at a restaurant, even returning to
work and simply putting passion into everything you
do – giving it your all, just like the production team
and cast of the wonderful Peter Pan.
“I’m looking forward to working with people again;
it’s going to be so nice to have creative people in the
same room and choreographers, lighting technicians,
musicians, actors as well,” says Sam.
“Although I direct the production it’s nice to have
actors’ input as well because everybody is different,
and you want to be able to bring peoples’ own
personality to the role.
“I can’t wait! It’s been too long since we’ve done this,
it’s nearly 18 months for most of us and nothing is
the same as panto or as theatre so the thought of
being able to just walk back and cry those lovely
words of ‘Hello Lichfield’ will be beautiful.”
This showstopper of a performance is not to be
missed and can be enjoyed by all of the family at
such a beautiful time of year, so take the time to
relax, sit back and laugh your way into the new year.
After all, as Captain Hook himself says, “It’s
magical, unmissable and joyous”.

Repair and share alike
DID YOU KNOW ABOUT THESE LOCAL GROUPS AIMING TO HELP US REDUCE UNNECESSARY WASTE
AND REPAIR, REUSE AND RECYCLE AS MUCH AS WE CAN? KATY EDGINGTON FINDS OUT MORE
With the eyes of the world on the UK
last month as world leaders and activists
gathered in Glasgow for the UN Climate
Change Conference (COP26), there’s
never been a more important time for us
all to do our bit for the environment.
We all know the three Rs - reduce,
reuse, recycle - that can help us be more
environmentally friendly: reducing what
we buy and use, reusing what we have or
passing it on to someone else who can use
it, and recycling our waste where possible.
A vital step in that chain is repairing
objects that are faulty or damaged, so
there’s no need to replace them and they
can be used again.
That’s all very well, but not everyone is
comfortable getting out the toolkit and taking a
screwdriver to their vacuum cleaner or threading up
a needle to stitch a ripped seam.
That’s where repair cafés come in. This worldwide
phenomenon is said to have started in the late 2000s
in the Netherlands and since then repair cafés have

sprung up across continents.
Pam Beale is the driving force behind Lichfield
Repair and Share Café. Set up around three years
ago, it started off under the direction of Kate Gomez
of the popular local history blog Lichfield Lore,
but Pam is now responsible for all the organising
and promoting the monthly café at Curborough
Community Centre.
Lichfield Repair and Share Café is a group of
likeminded people operating under the umbrella
of Transition Lichfield, an organisation that brings
together different elements of the community to
support the local economy and for the good of each
member group. So, how does it work?
The Café’s drop-in sessions are open to all visitors
who can bring an item or items for repair.
There are currently around 12 repairers who are
part of the group, all of whom volunteer their time,
so skills will vary depending on who’s available for
each session.
“We have around six people who can do odd jobs
and repair electricals, a few sewers and crafters who
can do repairs, and someone whose expertise is
marquetry and carpentry who also sharpens tools,”
explains Pam.
“We try to skillshare so that people can learn from

others how to mend things or learn
a craft. It could be crochet, or how
to darn your socks, or how to wire a
lamp. We open the doors from 2pm
until 5pm and people show up with
things - there’s no need to book in.
And we serve refreshments when we
can, too - that’s where the café part
comes in.”
There are no restrictions on the
items you can bring along, so if in
doubt, bring it in. If the volunteers
think your item is beyond repair
they will always say so. People have
brought in all sorts of objects over
the last three years.
“We’ve had a few old clocks that
people really value, but mostly it’s kettles, hairdryers
and other electricals,” says Pam. “We’ve had vacuum
cleaners, lawnmowers, a pushchair where the brake
was getting stuck. A few laptops and tablets. Our
repairers are sensible people and if you want some
advice as to whether to fix something or take it to the
recycling centre, we can do that type of check.”
This really important service is provided free of
charge, but you can make donations in exchange
for repairs which are put back into the Café to pay
for room hire, refreshments and so on. Pam believes
repeating, sharing and living by the ‘repair and reuse’
mantra is critical if we are to stop replacing goods
unnecessarily and reduce our waste problem.
“We’re living in a throwaway age when people just
get rid and get another if something isn’t working,”
she says. “That attitude needs to change - we all
know that. When we can repair an item for someone
that they thought was broken, it’s a great joy when
they can take it home and they don’t need to buy
another one.”
Most of us, when we take broken or obsolete items
to the recycling centre, think we’re taking it there to
be dealt with properly and recycled. Some of it is,
but by no means all. Electrical recycling waste is a
massive problem. Pam thinks manufacturers should
be playing a bigger role in preventing items ending
up in the recycling centre at all, by making spare
parts available or taking items back for repair.
“Manufacturers do pay into a central fund that’s
used by local authorities to recycle electrical waste,
but that’s the wrong way around,” she insists. “There
is Right to Repair legislation coming in, which will
mean for certain new products the manufacturer
has to have affordable spares available, but it’s very

limited. They have got to make things last longer.”
Lichfield Repair and Share Café takes place on the
third Saturday of every month (except December
and August) at Curborough, but Pam and the other
volunteers are always looking for ways to get the
message out and reach more people. They hosted
a pop-up in The Nest space in Lichfield city centre,
organised by Nurture Network in the former Marks
and Spencer. They’ve done repair sessions at the
Methodist church’s eco-festival in September as
part of The Great Big Green Week, and at the Fuse
Festival.
There’s also a new repair and share café that recently
started up in Burntwood. Local councillor Sue
Woodward was instrumental in getting it set up and a
few repairers who live locally offered their help. The
first session took place in early December.
They have looked into creating a ‘Library of
Things’, where members borrow useful items without
having to buy their own, but that’s still a little beyond
reach for now. However, Pam recommends the food
sharing app Olio, which has a borrow section for
other items, and Streetbank, another app where you
can share items with the community. So if you’ve got
a pressure washer, for example, and you’re happy to
loan it out you can do it that way.
The next Repair and Share Café at Curborough
Community Centre will take place between 2-5pm

A preloved Christmas
It’s the most wonderful time of the year, but it
can also be the most wasteful. As luck would
have it, The ReUsers have a more eco-friendly
way for you to shop this Christmas as well as
accepting donations in the aftermath, when you
inevitably find you’ve been gifted two of the
same thing or need to make space for the kids’
new toys.
Conveniently sited on the same road as Sutton
Coldfield Household Recycling Centre, The
ReUsers save around 250 tonnes of ‘waste’
from landfill every year by rescuing, restoring
and recycling secondhand items, in partnership
with Birmingham City Council and Veolia
Environmental Services.
Their huge Christmas shop was officially opened
by the Mayor of Sutton Coldfield, Councillor
Terry Wood, on November 8. They have
thousands of new and preloved Christmas items
for you to browse, from wreaths, ornaments,
tinsel, trees and vintage baubles, to Santa hats,
Christmas jumpers, CDs, books, gift bags and
wrapping paper. Each year the shop is gaining in
popularity, and already by January the team will
be preparing for next Christmas.
If you’re looking for a more environmentally
friendly gifting option this year, The ReUsers’
site is the perfect place to find hidden treasures
that others don’t want but are too good to throw
away. It has different departments including
antiques, bikes, electricals, furniture, garden and
sports, with all items cleaned and tested before
being sold. They also run an eBay shop where
you can view and purchase some of the more
unusual items from the comfort of your sofa.
It’s not just a great environmental cause you’re
supporting when you visit. The ReUsers is
a social enterprise - part of the JERICHO
organisation - which aims to break barriers and
change lives by creating jobs, work experience
places, and training opportunities.
You can also show your support by donating
unwanted goods. The donations station operates
on an appointment basis during regular opening
hours. A flood of donations of all shapes and
sizes, new and preloved, since the start of the
pandemic has meant that in 2021 the team
were able to extend their bookshop, and open
a clothes shop – modern and vintage – and a
haberdashery.

LICHFIELD AUCTIONEER RICHARD WINTERTON BROUGHT THE HAMMER DOWN ON 2021 WITH A SUCCESSFUL
FINE ART SALE WHICH SAW PLENTIFUL BIDDING FROM BUYERS WORLDWIDE ON AN ARRAY OF EXCITING LOTS
Lichfield’s auctioneer has finished the year on a high
with a Winter Fine Arts sale packed with luxury items.
From antique oil paintings and modern works of art
to fine ceramics and a cellarful of wine and whisky,
bidders from all over the world joined The Lichfield
Auction Centre online and over the telephone.
Appropriately enough for a sale of such high calibre,
one of the highlights was a handsome antique Tranter
revolver.
The 54 bore percussion pistol, a rare third model
from around 1860, was in fine condition retaining
virtually all its original finish and came in its original
mahogany case with a full set of accessories.
After an intense bidding battle, the revolver finally
sold to a bidder on the internet for £4,000.

CHOOSING THE PERFECT CHRISTMAS TREE IS NO EASY TASK, BUT BYRON LEWIS,
FROM LICHFIELD GARDEN CENTRE, HAS SOME TOP TIPS FOR GETTING THE MOST
OUT OF YOUR FESTIVE CENTREPIECE
December is here already (where did the year go?!)
and thoughts turn to Christmas - and Christmas
trees in particular. These form the focal point of
most living rooms, so here are a few tips if you are
thinking of having a real Christmas tree this year.
Choose your variety carefully; traditional Norway
Spruce have a good shape and smell great, but they
are really best suited to unheated rooms or outside
porches, because central heating and warmth will
cause their needles to drop.
Nordmann Firs are by far the most popular tree
today. These are soft to touch, easy to decorate
(not too sharp!) and, best of all, have superb needle
retention. They will still look good into the new year
if looked after correctly. You may also see Fraser Firs
offered at the garden centre. These also have good
needle retention but are generally more compact,
making them great for smaller rooms.
Your tree will need a stand of some description,
Attractive coloured metal stands with a reservoir are
popular – the trunk of your tree will drop into the
stand and can be bolted in position. Plastic buckets
will do the same job, but you’ll need to add some
weight either with stones or gravel and sand.
If you buy a potted or pot-grown tree, these can be
used year after year. Just remember if they are taken
into a warm room for Christmas, they will need
to get used to the outside temperatures again after
Christmas. Put them in a garage or cold greenhouse
for a few weeks.

Houseplants are always popular at Christmas,
either as a treat for yourself or as gifts for friends
and family. Favourites include cyclamen, azaleas,
Christmas cactus and, of course, poinsettia.
If you buy or receive a poinsettia, remember to
always remove any wrapping as soon as possible.
Poor air flow causes the lovely red bracts to fall.
Poinsettia also like warm rooms, away from any cold
draughts. A living room table is a good spot. Water
every few days, and they should look good well into
the New Year.

recycle your Christmas tree. St Giles Hospice are
running their popular ‘Treecycle’ campaign for 2021;
in return for a donation to the hospice, your tree will
be collected and shredded for use as a garden mulch.

The Royal Horticultural Society offers some
expert advice for anyone looking to grow or
maintain a pot-grown tree to enjoy year after
year:
Christmas trees can be grown from seed
or cuttings - both semi-ripe and hardwood,
but are usually bought as full size trees for
displaying indoors.
To reduce stress and damage to living trees,
display them in a cool room.
Bring trees indoors as late as possible – the
weekend before Christmas is ideal.
Do not keep living trees in the house any
longer than 12 days, but be guided by the
tree. If it looks unhappy, put it back outside.
Either plant the tree out in the garden after
Christmas or, if you want to bring it indoors
again next year, grow it on in a container,
moving it into a bigger pot annually until you
reach the maximum size that can be moved
comfortably (about 45cm or 18in diameter
and depth). Soil-based John Innes No 2
potting media is ideal.
Christmas trees planted in pots will be limited
in their size by the constraints of the pot.
But if planted out in the garden, Christmas
trees can get very large, reaching a height
of about 15-20m (50-65ft) in 20 years, and
possible eventual heights of about 40m
(130ft). The smallest growing Christmas trees
are probably Fraser firs, which reach about
7m (23ft) after 20 years, attaining an eventual
height of about 20m (65ft), and Korean firs,
which reach 4m (13ft) in 20 years and an
eventual height of 10m (33ft).
Remember to ask your supplier where the
trees come from, and to choose a locally
sourced and grown tree, or one that has
at least been grown in the UK rather than
abroad.

A Lunar experience
LUNAR BY NIALL KEATING OPENED WITH A RED CARPET RECEPTION AT
WORLD OF WEDGWOOD IN STAFFORDSHIRE THIS NOVEMBER. KATY
EDGINGTON LEARNS MORE FROM THE TWO MICHELIN-STARRED CHEF
Staffordshire-born Niall Keating is one of just a
handful of chefs in the UK to hold two Michelin
stars right now, as Executive Chef of The Dining
Room at Whatley Manor in Malmesbury, Wiltshire.
You may recognise him as the BBC’s Great British
Menu Champion of 2020.
When Ed Myhill and Craig Wilkinson of The Great
British Experience Company (the minds behind The
Great British Drive In, London experience ‘The
Murder Express’ and Stafford’s Alberts Cafe) invited
Niall to oversee Lunar, a new modern dining concept
opening at World of Wedgwood’s Barlaston site in
the heart of Staffordshire, he leapt at the chance.
With a well-deserved reputation as one of the leading
chefs in the country today, Niall has of
course had various different proposals
and opportunities present themselves over
the last few years, but he says “nothing
felt quite right as coming home”.
“It’s always been a dream of mine to
open a restaurant in Staffordshire,” Niall
says. “I’m so proud of home and to have
the opportunity to create something
special in the area is really exciting.”
Lunar takes over the former dining
hall at the historic Wedgwood estate.
The canteen-style setting has been
transformed into a sophisticated new
restaurant where guests can experience
modern British cuisine served only on
Wedgwood fine bone china. The team
hope it will bring a welcome breath of
fresh air to the local food and drink scene.
“Being so close to bigger cities such as
Manchester and Birmingham, which
have great restaurants and bars, means
Stoke often gets forgotten about as
somewhere that has great potential for
the hospitality industry,” Niall says. “A
modern dining experience like Lunar
is perfect for the area - and what has
been missing. It’s a great chance for people to try
something new and for both the staff and guests to
get excited about local produce and celebrate the
history that’s always been here.”
The opening comes in the wake of a very tough
period for the whole hospitality industry, but Niall
for one has clearly not been resting on his laurels for
the past 18 months. The Paradise Carriage started
life as a street food trailer at the Exchange Bar and
Kitchen in Hanley, Stoke-on-Trent. Niall began
using it during the first lockdown in 2020 to cook
and deliver meals to key workers, before taking it to
Whatley Manor as a drive-through takeaway venture.
He explained that it played a really important role

in keeping his team motivated when the hotel was
closed and they didn’t have any guests to feed.
“Getting the Paradise Carriage up and running in
the car park, and then taking it on the road in the
summer gave us all an opportunity to enjoy cooking
some great food that was totally different to what
we usually do, and to entertain guests outside of the
restaurant was just great fun.”
Lunar is something altogether different again - a
modern dining concept based around contemporary
small plates and larger sharing dishes. In their
approach to menu design and development, Niall
and Craig have taken inspiration from the rich
history of Staffordshire, aiming to represent the
local heritage of the Potteries on a plate, as well as
drawing on their own experiences.
“The idea is for everyone to enjoy sharing food
family style, in a relaxed yet elegant setting,” Niall
adds. “The menu is inspired by both mine and
Craig’s travels, with Asian influences and flavours
that showcase new techniques and give guests the
chance to try something new.”
From upcycling furniture to working with sustainable
suppliers, Lunar has strong environmental and
ethical standards running through its veins. There
is a prominent focus on nurturing local talent and
the team are clearly passionate about using suppliers
local to the restaurant as much as possible.
“I’ve already got a great relationship with Perry’s
Butchers in Eccleshall, who supplied the geese for

one of my dishes on Great British Menu. They are
on board and have already stocked our meat aging
fridges ready for opening,” says Niall. “Lymestone
Brewery in Stone, who make my favourite beer -
Einstein - and own a pub called The Borehole, where
I always go when I’m back home, are also involved.
A close family friend, George Dyke, rears beef a few
miles away from home so we are hoping to serve his
excellent grass fed beef in the restaurant soon.”
As well as these existing relationships, they have met
other new suppliers in the area such as Smith’s Milk
Churn, a dairy farm between Stone and Stafford,
and Courtyard Coffee Roasters in Eccleshall,
during the planning process. The ingredients are
transformed with great skill and care into an exciting
and intriguing menu.
“My favourite dish on the menu has got to be the
Staffordshire Clay-Baked Chicken,” says Niall.
“Craig had an idea to use clay from Wedgwood in
the cooking methods somehow, and we’ve developed
a dish that is perfect for sharing at the table: a whole
chicken stuffed with treasured rice, that is baked in
the clay and then carved for everyone to share.”
Josiah Wedgwood’s influence is apparent throughout
your dining experience at Lunar, from the
carefully chosen interior palette inspired by his
experimentations with colour, down to the industrial
aesthetic as a nod to Wedgwood’s place in the
industrial revolution.
“The richest part of Stoke’s heritage is the Potteries,

and Wedgwood is one of the most renowned and
oldest pottery companies, which also has such a
prestigious repetition in the hospitality industry – so
to have the opportunity to work with them and bring
Lunar to their famous site on Wedgwood Drive fits
perfectly with the atmosphere we want to create,”
explains Niall.
Even the name itself was inspired by the legendary
Lunar Society, a supper club formed during
the ‘Midlands enlightenment’, of which Josiah
Wedgwood was a founding member. It brought
together forward thinkers, entrepreneurs, scientists,
philosophers, poets and inventors of the time.
Speaking of creative minds, Ed and Craig, also
originally from Staffordshire, have spent time
traveling around the world as well as establishing
their successful events company in recent years. The
intention with Lunar is to bring their experiences
home and create world-class experiences in their
home county. So, how has the team come together?
“We all have different experiences coming from
different backgrounds, but working together has
given us the chance to be creative together and bring
to the table what we do best,” Niall tells me. “Their
passion for hospitality and their skills when it comes

to design and bringing ideas to life has made the
whole experience enjoyable and I am so proud of
what we’ve built together. It also helps that we all get
on and clicked straight away!”
Lunar, like Wedgwood, is a celebration of the past,
present and future. It’s looking to the future and the
nurturing of the up-and-coming local hospitality
scene that stands out for Niall.
“I’m most proud of the opportunities that Lunar is
giving to the team. There is such great talent in the
area, so I’m excited to be able to find it and work
with a whole bunch of people who have shared
interests and want to be part of creating something
really exciting.”
World of Wedgwood was already home to the
iconic Wedgwood tea room, Wedgwood Factory and
Wedgwood Flagship Store, and the V&A Wedgwood
Collection. They recently opened a new store, Josiah
and Co, exclusively selling products handcrafted by
local artisans in Stoke-on-Trent and Staffordshire.
“We are delighted, inspired, enthused and extremely
proud to be working with Wedgwood,” says codirector
Craig. “The synergy, values and ambitions
we all have could not be more aligned and we’re
looking forward to making Lunar a destination that
we can all enjoy and be proud of for many
years to come.”
Alongside Lunar, the Wedgwood estate has
also welcomed a new garden Landpod,
where guests can enjoy takeaway afternoon
tea, reflecting their ambition to create a
leisure and hospitality destination to attract
visitors from far and wide.
“We are delighted to welcome Lunar
to Barlaston,” says Jemma Harrison,
newly appointed Head of World of
Wedgwood. “The combined passion and
experience of Niall, Ed and Craig brings
something unique and very, very special to
Staffordshire; it’s been a real privilege to be
involved in this project and I’m so excited
to see the concept come to life at World of
Wedgwood.”

But finally, as a North Staffordshire native,
there’s one burning culinary question it
was impossible not to ask - what does Niall
have on his oatcakes? “Sausage, bacon,
brown sauce. Always.”

Delicious - and then some
IN AN UNASSUMING CABIN IN THE DEPTHS OF A LOCAL GARDEN CENTRE
LIES ONE OF LICHFIELD’S MOST EXCITING BESPOKE DINING EXPERIENCES,
DUBBERLEY DELICIOUS, AS AMY NORBURY DISCOVERS
Some of the best inventions in life have come about
by happy accident. A melted chocolate bar brought
about that household staple, the microwave, while a
bit of experimentation with syrup and carbonated
water led to the world’s most popular fizzy drink,
Coca-Cola. And it was while playing around with
ideas for using up a glut of foraged wild garlic that
Lichfield chef Jack Dubberley hit upon one of the
most moreish snacks I’ve ever had the pleasure of
enjoying; wild garlic popcorn.
The aforementioned tasty treat was the first
introduction we had to Jack’s impressive culinary
style at Dubberley Delicious, a bespoke chef ’s table
experience based in a cabin at Lichfield garden
centre The Plant Plot.
Yes, you heard that right, a garden centre. But don’t
let the somewhat unusual surroundings fool you. One
you step inside the Dubberley Delicious cabin, the
stylish and cosy setting certainly lives up to its fine
dining billing.
Dubberley Delicious is a completely different kind
of dining for Lichfield. With a single table seating up
to just ten guests facing the open kitchen where chef
Jack works his magic in front of your eyes, this is a
chef ’s table experience - just without the rest of the
restaurant.
And the difference doesn’t end there. The menu
is tailored to each party, meaning you can enjoy
something truly bespoke. You can choose to approve
the menu beforehand or, like us, be greeted with a
surprise of Jack’s making. Hell, you can even choose
the accompanying playlist; the evening really is
yours.
Jack’s passion for food, particularly seasonal and
local ingredients - and foraged where possible - runs
through the Dubberley Delicious ethos. Starting his
professional career in the kitchen at Swinfen Hall,
Jack was then a driving force behind the launch of
Larder, helping the Lichfield restaurant earn two AA
Rosettes before heading back to Swinfen to help the
team regain their three AA Rosettes. And anyone
who has dined at either of those two venues will
recognise some of Jack’s delicious signatures.
It was at the height of the pandemic last year that
Jack decided to strike out on his own, creating
delicious deli goodies and dine-at-home feasts, then
offering outside barbeque dining before finally

opening the doors to Dubberley Delicious in May
this year.
With the help of sister Lucy, a teacher by trade who
runs both the front-of-house operation and behindthe-scenes
promotion, Dubberley Delicious has
quickly become a Lichfield must-visit.
We started our evening with a glass of fizz and that
sensational wild garlic popcorn, while Jack and
Lucy ran through some elements of the menu and
a selection of Noughties indie classics provided the
musical backdrop.
The drinks list is small but perfectly formed, offering
just enough choice to suit everyone with wines,
locally sourced beers and a handful of spirits, as well
as soft drink options.
Rather than freshly baked bread, it was black truffle
crumpets and a healthy slab of butter which were
first up, each a little mouthful of heaven. Crumpets
were a staple on the Larder menu under Jack’s reign,
and most definitely make for a welcome change to
the usual bread offerings.
The first course of sweet and sour tomatoes
teamed with a smoked ricotta was a complete
revelation, topped with puffed pearl barley to add
a contrasting crunch to the smooth, rich cheese
element. Exploding with flavour, these little bombs of
tomatoey goodness are exactly how tomatoes should
be served from now on.
And the treats kept coming.
Welsh wagyu brisket with wagyu fat crumb and an
incredible mushroom ketchup was melt-in-the-mouth
good, with delicate sea veg adding a salty balance.
Then came perfectly cooked monkfish on a curried
cauliflower puree with a sweet hint of mango, all
crowned with the umami savouriness of Bombay
mix.
It was hard to choose a standout dish of the night,
but the revelation that is lamb fat mash might
just have sealed the deal for the main course. A
beautifully pink piece of lamb rump, a fresh hit of
peas and a charred roscoff onion were all delicious
components, but it was the silky mash flavoured with
lamb fat which stole the show. So much so that we
were all asking for more - and still discussing its fine
merits many days later.
A little theatre followed with the first of the two
dessert courses as Jack wielded the liquid nitrogen
to complete the raspberry elements of his lemon,
raspberry, meringue and shortbread concoction.w
The final flourish was a piece of chocolate heaven,
with a Manjari chocolate cremeux, raisins, a
chocolate crumb and a delectable bay leaf ice cream
which just complimented the intense chocolate
flavours perfectly.
Throughout the evening, Lucy kept the drinks
topped up and the conversation flowing, creating the
perfect double act with her chef brother and keeping
us all completely engaged in each element of the
meal.
The food is, indeed, every bit as delicious as the
name suggests. But Dubberley Delicious is more than
its, admittedly fabulous, culinary offerings. It’s heart,
passion, and a desire to create a different kind of
dining event.
We could just tell you how good the Dubberley
Delicious experience is. But we strongly suggest that

A winter warmer
MICHELIN-LISTED THE RED LION AT BRADLEY, NEAR STAFFORD, HAS RECENTLY
REOPENED ITS KITCHEN WITH A BRAND NEW TEAM OF CHEFS AND AN EXCITING
NEW MENU. HERE THEY SHARE ONE OF THEIR DELICIOUS DISHES
Braised pork belly | pine nut paste | roasted beets |
charred shallot | toasted grains | beer sauce
INGREDIENTS
Pork belly:
1 side of pork belly, bones removed
1 white onion, roughly chopped
2 carrots, peeled and chopped
5 cloves of garlic
1 handful of thyme
10 fennel seeds
10 black peppercorns
Water (to cover the belly pork)
Pine nut paste:
100g pine nuts
300ml water
Salt to season
Roasted shallots and beets:
10 red baby beets
4 banana shallots
1 handful of thyme
Salt to season
Toasted grains:
1 tbsp oats
1 tbsp pumpkin seeds
1 tbsp fennel seeds
1 tbsp honey
1 tbsp Maldon sea salt
1 tbsp sesame seeds
Beer sauce:
100ml ale of your choice (we use
Banks’ Amber)
100ml beef stock
Place the pork into a deep tray lined with greaseproof paper. Add
the remaining pork belly ingredients on top of the pork and cover
with cold water. Add another piece of greaseproof paper on top
of the pork belly, cover the tray with foil and put in the oven for
four hours at 160°C.
For the pine nut paste, toast the pine nuts in the oven until
golden. Meanwhile, put 300ml water into a saucepan and bring
to the boil. Add the toasted pine nuts and cook until they are soft,
then place mixture into a food mixer and mix, adding extra water
if the mixture is too thick, and season with salt.
Add the beets and thyme into a saucepan and gently boil. Peel
and cut the shallots into halves and add into the saucepan. Once
both the beets and shallots are tender, transfer to the oven and
roast for a few minutes until golden. Season with salt.
For the toasted grains, combine all the ingredients in a bowl then
place onto a tray and toast in the oven on 160°C until golden.
Add the beer to a saucepan over a low heat and simmer, reducing
the sauce to a quarter of the original volume. Then add the beef
stock and continue to cook down to your desired consistency.

HIS FESTIVE PAIRING TIPS
It’s the most wonderful time of the year and you’ve
put enormous effort into stocking the fridge, freezer
and cupboards with the festive fare to match. But
when it comes to choosing what drinks to pair with
each occasion, many of us have only the vaguest
idea. We end up reaching for a familiar name or a
bottle we’ve enjoyed before.
Born and raised in Staffordshire, Bert Blaize is a
sommelier, wine writer and consultant who learned
the ropes at La Belle Epoque in Manchester and
Raymond Blanc’s Le Manoir aux Quat’Saisons,
before taking the reins at The Clove Club in
Shoreditch - the UK’s top-ranked restaurant in
‘World’s Best 50 Restaurants’ for two years running.
In 2018, Bert was named the UK’s Top Young
Sommelier by Flint Wines. He now takes care of the
wine at Serge et le Phoque in Fitzrovia and opened
his first shop in London in 2020. It’s safe to say he
knows a thing or two about pairing wine and food
Bert’s book Which Wine When, co-authored with
his friend Claire Strickett and published in 2019, has
lots of easy-to-follow advice on choosing wines to
serve alongside all of your festive fare in a chapter
dedicated to ‘going the extra mile’. With roast turkey,
they recommend a zesty, fresh white like an Albariño
or a textured white like a Chardonnay or Chenin
Blanc. If you’re going for rich, dark duck or goose,
try a fruity, spicy red like a Northern Rhône Syrah or
Austrian Blaufränkisch. A vegetarian main like whole
roast celeriac is complemented to perfection by an
aromatic white Rhône blend.
There’s another whole chapter on wines to pair with
cheese - ideal if you’re taking on board our pointers
from the November issue on building the perfect
cheese board. Bert and Claire suggest Pecorino to go
with Pecorino, for example, and a Chilean Cabernet
Sauvignon with your matured cheddar. But how
about a more local recommendation?
“Most cheeses pair well with sweet wines, but it’s
hard to make sweet wines in this country - never
mind Staffordshire - because of the cooler climate,”
Bert says.
“What does go well together is a Camembert-style
soft cheese with sparkling wine. That’s because of
the toasty, brioche notes in the wine and the acidity
that cuts through the creamy richness of the cheese
- like a slice of zingy green apple. Halfpenny Green’s
English sparkling wine works really well.”
When it comes to sparkling wines, and Champagne
in particular, Bert believes It’s important to support
smaller growers rather than the big names. One of
the biggest companies in the world, LVMH, owns
Moët & Chandon, Dom Pérignon, Veuve Clicquot
and Krug.
“They’ve very cleverly turned Champagne into a
luxury commodity rather than a wine style, which
I don’t think is right because I think Champagne
should be for everyone,” he argues.
“We call them ‘growers’ because they used to supply
all the grapes for the big houses, but those houses
have priced the growers out of making their own
wine. Now there are a lot of these small wineries
in Champagne. You’ve got to have Champagne at
Christmas really, but supporting these smaller names
is a great way to go.
“Otherwise, I love Cava at Christmas. It’s getting
better and better and you don’t have to spend that

much to get a great example. It’s a nice refresh for
your palate, too.”
What about that other most familiar of Christmas
tipples: mulled wine?
“I think making mulled cider is much more
interesting,” says Bert. “You can get really
good organic cider from Dunkertons. It’s
lower ABV than a mulled wine, obviously,
and the traditional spices like cinnamon and
nutmeg go well with baked apple flavours.
It works much better than mulled wine, it’s
cheaper, and also it’s a waste of good wine,
I think - drink the wine instead!”
When it comes to relaxing by the fire of an
evening after all the presents are wrapped,
Bert reckons you can’t go far wrong with
sherry as a nightcap - and don’t forget to
leave one for Santa too.
“It’s really good value for money and there
are so many different styles to explore. It
tends to work with quite rich foods, because
it’s quite nutty and rich. You can get Pedro
Ximenez, which is like liquid Christmas
pudding, or there’s Manzanilla sherry
which is dry and Amontillado with a bit
more richness.”

Negroni
Wondering what to serve visitors alongside
a mince pie? Look no further than Bert’s fig
leaf negroni. Infuse your gin now ready for
the holidays.
Take a bottle of gin, put it in a sealable jar
and add some fig leaves. If you can’t find
fig leaves, blackcurrant or bramble leaves
also work well. In two weeks to a month
you’ll have a really nice infused gin.
Combine one part gin with one part sweet
vermouth and one part Campari, stir over
ice and serve with a wedge of orange. Or
combine equal measures into a bottle and
simply pour over ice when your guests
arrive.
BERT SUGGESTS A SEASONAL TWIST ON
THE CLASSIC NEGRONI COCKTAIL BY
INFUSING YOUR GIN WITH FIG LEAVES
When you’re buying wine it pays to visit a smaller,
independent wine shop rather than the supermarket.
When you buy a £5 supermarket wine, it works out
around 30p on average for the grape juice itself. The
vast majority of your pound is going towards taxes,
duties, marketing and the supermarket itself.
“You’re getting ripped off!” Bert warns. “There’s a
lovely wine shop in Eccleshall called Three Pillars.
Go into places like that and chat to knowledgeable
people - there are lots of them out there and that’s
the best way to get the inside information. Ask
them what’s good value for money. They’re doing it
because they love wine, not to become millionaires.”
Your local wine shop will also be able to advise if
you’re choosing wine to gift to a friend or loved one.
One of the best ways to build your own knowledge
is to go to a wine tasting, learn and explore different
styles. There are plenty of independent wine shops
that have popped up during lockdown, including
Bert’s own.
Situated between East Finchley and Highgate in a
classic car showroom, Bottles ‘n’ Jars is a luxury food
and wine store selling a range of wines, craft beers,
tinned goods, breads, oils and more. They deliver
nationwide and offer wines starting from £9 per
bottle.
“We wanted it to be affordable. So you can come in
and get some nice pasta handmade in the UK with
UK grains, a nice sauce and a bottle of wine and
have dinner on the table for £15.”
If you’re lucky enough to receive a carefully chosen
bottle or two for Christmas, proper storage is key to
keeping your wine in fine condition for when you’re
ready to crack it open. Still, cool and dark is the
mantra to remember, says Bert.
“The back of a cupboard is ideal, but the kitchen
is the worst place because the fluctuations in
temperature can ruin wine in a couple of months.
Of course a cellar is ideal. The temperature should
be between 12-16 degrees Celsius. I keep my wine in
a bonded account, where you pay per bottle per year
and they keep it in storage for you. That means it’s
out of sight and I can’t drink it!”
In recent months, Bert has worked with chef Tom
Shepherd on the wine list for his new Lichfield
restaurant, Upstairs, and is hosting what is planned
as a series of seasonal events with The Table Market
at Sandon Hall. So, would he ever open up a Bottles
‘n’ Jars branch in Staffordshire?
“My girlfriend wants to move to Norfolk and she’s
the boss, so I think I’ll have to open one there
instead. But I love Stafforshire still and still follow
Port Vale. I am trying to do more events here
because it has a special place in my heart.”

After spending six months travelling and
exploring Australia, I met up with my parents
in Singapore and Indonesia to celebrate my Mum’s
birthday and explore a new part of the world together.
The final part of our trip was spent in Gili Air, an
island off the coast of Bali and Lombok. We spent
four days here and explored our little island as well as
the surrounding ones.
The Gili Islands are renowned for fantastic snorkelling
and a retreat from the hustle and bustle of Bali.
They are a popular destination for those wishing
for a twin or triple centre trip in Bali and a great
choice when wanting to get away from it all. The
largest of the Gilis, Gili Trawagen (Gili T) is the most
well-known. Popular with backpackers and luxury
travellers alike, the island has some great nightlife,
water sports and accommodation. Gili Meno is the
smallest island and is popular with honeymooners.
Gili Air is lesser known and is family friendly with a
quieter air. At a mere 15 square km, it is easy to bike
around Gili Air in under 30 minutes, with each side
of the island showing off a different type of beach and
style.
Another fun fact about Gili Air is that there is no
motorised transport on the island and therefore the
island is accessible by foot, bike or horseback. When
we first arrived on the island from Bali we were
immediately ushered towards a local horse and its
owner and our bags were placed on the cart the horse
was pulling. We were also encouraged to jump in.

THE GILI ISLANDS ARE A
TROPICAL PARADISE
This is a popular method to get around the island and
since our accommodation was at the opposite end of
the island to the port, was efficient in getting us and
our bags to where we needed to be.
We arrived at our villa for the next four days, Akasia
Villas, and were impressed with the two bedroom
villa we had booked. We had our own plunge pool
and two spacious bedrooms with outside bathrooms.
The accommodation was a bit of a trek to find as it
is hidden away in the centre of the island but was a
lovely base as it was quiet and walkable to some great
little spots for food.
We settled ourselves in and chose to go for a walk as
evening set in. Gili Air is very easy to walk around
and although some of the little streets may be hard to
navigate you’ll always come out by a beach at some
point!

enjoyed the local
food which I found
full of flavour and
well catered towards
vegetarians. There
is little nightlife on
Gili Air so after our
meal we headed back to our villa to
play cards and have an early night
reading.
A highlight of any trip to the Gili
Islands is a snorkelling trip. The
region is known for turtles, as well
as underwater sculptures off Gili
Meno. We hopped on a half day
snorkelling tour and went to several
popular snorkelling spots in the
Gilis. We were lucky enough to see a
number of turtles but were advised
not to follow them into the deep
waters. They did get close, however,
and it was so special to swim with
these amazing animals. The coral
around the islands is now fairly
bleached but there is still some lovely
coral to explore with a wide variety of colourful fish.
Seeing the underwater sculptures wasn’t on our
original itinerary but after I asked our guide, he was
kind enough to make a detour towards the left side
of Gili Meno and to the popular photo spot.These
underwater statues were created and commissioned
by BASK, the eco-resort where the statues sit in front
of. They were made from the casts of real people and
are a haunting reminder of our impact on the world.
Their overall goal is to raise awareness of the death of
our world’s coral reefs with the hope that in the future
these statues will become a man-made reef.
The site was quite busy with tourists, but I was able
to take a few photos of the statues with no people
in - quite a feat! Our guides also tempted fish with

some food to make the scene underwater even
more magical. The artist, Jason deCaires
Taylor, also has sites in the Canary Islands and
Mexico as well as a pop-up exhibition in the
Thames.
A snorkelling guided tour is a great way
to explore the many sites around the Gili
Islands. They are inexpensive and can range in
luxury. We chose a very basic boat but found
the guides to be knowledgeable and caring for
the environment. We booked this on the island,
but they can also be booked in advance if you
would like peace of mind.
We also treated ourselves to massages on Gili
Air. Massages and other spa treatments are
famously cheap in South-East Asia so we took
full advantage. This was a lovely experience
to share with my Mum and we had a giggle
as our limbs were twisted in a few interesting
ways. We may have overlooked the fact that
we were very oily after this massage and found
that after sunbathing we got a little fried!
Beaches are varied on Gili Air and go from
rocky to white sand. Some are closed off and
for guest use only so we did struggle slightly to
find good beaches that we were allowed to be
on, as our villas were inland. Some did allow you to
pay to be on the beach or asked for you to eat lunch
there. We obliged to this in most cases and spent much
of our four days there sunbathing and swimming off
the shore.
Throughout our stay I also made sure to take many
photos on the iconic swings. These are owned by
various hotels along the beaches and are easy to
find. There are some better for sunset and sunrise so I
made sure to get some photos with both.
We found the sunrise we encountered to be serene and
very reflective. With no one else awake on our side of

the island we enjoyed watching the sun rise over the
mountains on Lombok and place a cool kiss on the
first fishing boats of the day.
This island may not have a huge variety of things
to do for the adventurous traveller, but it does make
up for this in its charm and serenity. The people are
friendly, and the island is wonderful to cycle around
whilst enjoying the lack of motors. We enjoyed our
time here and found it was a wonderful place to spend
some time as a family after six months apart.
As we bid farewell to the island, we headed to
Lombok to catch a flight back to Singapore via
Jakarta. I wanted to add this in here as our journey
from the port to the
airport was one of the
most memorable moments
of our whole trip. We first
headed to the beach and
waited for our transport
off the island, a boat
named 007 to pick us
up. Sure enough they
did and we roared off to
Lombok in style. We were
transferred to our land
transfer and guide Asier,
who enthusiastically told

us much of the history of the island of
Lombok as we drove past idyllic deserted
beaches. The island is fairly undiscovered
now but it is due for a rise in tourism in the
coming years. Much of these stunning bays
filled only with palm trees will soon be large
resorts, so we enjoyed seeing the island in its
raw state.
As we drove throughout the capital city,
Mataram, Asier offered to show us his
home and his family’s tempeh business. He
said that he takes many visitors here when
they express an interest in the daily lives
of those on the island. As we parked up at
his community many of the local children
came out to greet us. As we walked to his
home, many of the children shouted hello
while the teenagers tried out some of their
learnt English phrases. At our driver’s home
we met his wife, parents, and extended
family. Everyone had a role to play in their
tempeh business and it was so interesting
to see the process, as I had grown fond of
this amazing vegetarian friendly dish. We
were presented at the end of our tour with
still warm fresh tempeh and it was such an
honour to have been able to have met his
family.
We left Lombok with an unforgettable local
experience and more knowledge of the
place we had briefly explored. I would love
to go back in the future and spend some
more time here.
Our trip in Indonesia was at an end and
we reflected on the different aspects of
our trip. We started in Jakarta for a quick
24 hours. This city was intense, and we
never got to truly experience it, I think it
would have been a little too much for my
Dad! Ubud in Bali was full of culture and
was jam-packed with activities. I loved this
town though and felt very comfortable
here. Gili Air was a perfect end to the trip
full of relaxation and will be remembered
for the amazing marine life and bonding
time with my family.
I headed back to Australia reignited with
excitement for the continuation of my
travels and the adventures that awaited me.

The show opens on a wintry soundscape; the Dickensian tones of Simon Callow as
Drosselmeyer echo across the auditorium as he introduces the enchanting tale to our
captivated audiences. Tchaikovsky’s soaring score and the 60-strong Royal Ballet Sinfonia
take centre stage in this unique production that brings the orchestra out from the pit and
onto a platform raised above the stage.

and co-written by Hamish McColl, Sean Foley and, of course, Eddie Braben will be bringing
sunshine to Birmingham this Christmas.
‘Thom’ has written a play, an epic set in the French Revolution called ‘A Tight Squeeze for
the Scarlet Pimple’. ‘Dennis’, on the other hand, wants to continue with their double act.

Adam Crotty and Martyn Stevens have been best
friends since their schooldays; the duo played football
